Description: Jamaican Jerk Chicken is one of my favorite chicken dishes. The smells of the herbs and spices mixing with the smoke are out-of-this-world. This is a pretty authentic recipe, and I show you a little trick to get that "pimento wood" smoky flavor. Check out Backyard Life: backyard.exmark.com/category/outdoor-living/?utm_campaign=EX21_BackyardLife&utm_source=EX21_Influencer&utm_content=GregMrvich Jamaican Jerk Chicken Prep Time 20 minutes Cook Time: 70 minutes and up, depending on weight Ingredients JERK BASE 1 3 ½ - 4 pound chicken ½ cup packed brown sugar 1 tablespoon ground thyme 1-2 bunches green onion 1 or 2 habanero peppers 2 teaspoons ground allspice 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg 2 tablespoons soy sauce ½ teaspoon minced ginger 6-8 cloves garlic 1 teaspoon kosher (or sea) salt Fresh ground pepper to taste JERK SAUCE 2 tablespoons Jerk Base 2/3 cup pineapple juice ¾ cup ketchup 6 ounces beer (lager) instructions Directions for Jerk Base 1. Combine the above-listed ingredients in a blender or food processor and mix until smooth. 2. Use to marinate chicken for at least 2 hours, but preferably overnight, before cooking on the grill. 3. Set-up grill for indirect cooking at 300ºF. 4. Cook chicken on the indirect side, until the internal temperature reaches 165ºF in the breasts and 175ºF in the thighs. Directions for Jerk Sauce 1. Combine all ingredients listed for the Jerk sauce in a pan over low heat and allow to simmer for 30 minutes to an hour, stirring often. Add more juice or beer to thin the sauce. 2. Pour sauce over cooked Jerk chicken at serving time.
